I know, I know I’m English, what do I know about chili?

I know how to get children to eat it even if it contains secret vegetables. My youngest son has a pretty rare condition that means he cannot tolerate the texture of most vegetables.  It’s a pain but you learn to work around it and it means that you get to be a veritable ninja in hiding the good stuff 😉

I use half beef and half pork or turkey mince as it’s (a) cheaper and (b) doesn’t feel as “heavy” I also tend to make it with mince that has gone Ooops which drastically cuts the cost. I have estimated the cost at £5 for the meat here but the last batch I made actually had a meat cost of £1.67

Ingredients and approximate cost

  • 1lb/500g minced / ground pork (or veal or turkey or chicken.. ) (£2)
  • 1ib/500g minced / ground beef (£3)
  • 1 can of tomatoes (50p)
  • 3 cloves of garlic (10p)
  • 1 beef stock cube (5p)
  • 1 large onion chopped (10p)
  • 1 courgette (zucchini) chopped (30p)
  • 300g mushrooms chopped (80p)
  • 1 carrot chopped (5p)
  • 2 bell peppers chopped (60p)
  • Dried mixed herbs to taste ( I use 1/2 tsp each of basil, marjoram, oregano and thyme)
  • 2 tsps ground coriander
  • 2 tsps ground cumin
  • 2 tsp cayenne pepper
  • 2 tsp smoked paprika
  • 1 tsp dried chilli
  • 1 tsp sugar or sweetener
  • 1 can baked beans in tomato sauce (Heinz for preference) (75p)

Total cost £8.25 serves at least 8 (I usually freeze half) but more like 10

Put the meat into the slow cooker on high, you may need to break it up a little. Whilst that is getting going add everything else into a large pan except the beans. Bring to the boil then simmer until tender and then blitz until smooth. Pour over the meat and cook for at least 6 hours on medium in a slow cooker 30 minutes before the end throw in the beans.
That’s it. I serve with tabasco on the table for the adults if they so desire as it’s a family dish,  and you can add but you can’t take away 😉

Simple, healthy, tasty and cheap as chips.  That to me is what chili is supposed to be

Variations

Use Quorn or Soya mince for a veggie version – note to anybody reading – chucking vegetables into a slow cooker with chili flakes does not a chilli make. It’s supposed to have flavour. Put some spices in there!

I often add celery salt and or a little cayenne depending on my mood. I like experimenting with spices.

If the cost of the meat puts you off and you like them then substitute half of the meat for lentils, chickpeas etc

You can of course add the traditional red kidney beans to this instead of or in addition to the baked beans 🙂

I like chili with cottage cheese rather than the usual sour cream and grated cheese, it tastes almost as good and makes this a very low fat dish
